At our roastery in Calgary, we’re always on the lookout for coffees that tell a story —
not just of where they come from, but of how they make you feel in the cup. Our
Colombia Huila is a perfect example.
Grown in the Heart of Huila
This coffee comes from the lush, mountainous region of Huila, located in southern
Colombia. Grown at elevations between 1300 and 1650 meters, the high altitude
plays a key role in developing the beans’ vibrant acidity and clean sweetness. Cooler
temperatures at these heights slow the maturation of the coffee cherries, resulting in
a more complex and layered cup.
Medium Roast, Balanced Character
We roast this Colombia to a medium level — just enough to enhance its natural
sweetness while preserving the bright citrusy character that makes it shine. The
result? A cup that feels familiar yet intriguing, cozy yet refreshing.
Flavor Notes: Lime, Caramel, Chocolate Milk
Every sip offers a journey: it starts with a sparkling lime-like brightness, then settles
into smooth caramel sweetness, and finally leaves a lingering finish reminiscent of
chocolate milk. Whether you’re drinking it black or with a touch of milk, the balance
holds beautifully.

Our Colombia Huila is incredibly versatile. We love it brewed as a pour-over for its
clarity and liveliness, but it also performs wonderfully as espresso, especially if
you’re into sweeter, milk-friendly shots.
